Sweet Potato Country Ham Biscuit Recipe for Spring Brunches

Sweet Potato Country Ham Biscuits
Ingredients1 cup all-purpose flour3 tsp. baking powder2 tsp. white sugar1 tsp. salt2 tbsp. butter, cubed3/4 cup mashed sweet potatoes5-6 tsp. brown sugar1 1/2 tsp. cinnamon1 tsp. nutmeg1/2 tsp. ginger1/8 cup milk1/2 – 1 pound thinly-sliced country (salty) ham
Directions

  1. Preheat oven to 400 degrees.
  2. Boil sweet potatoes until tender and mash. Add in brown sugar, cinnamon, nutmeg, and ginger to mashed potatoes.
  3. Stir together flour, baking powder, white sugar, and salt. Use your hands to cut in the butter until pieces of dough form and become slightly grainy.
  4. Mix in the sweet potatoes and enough of the milk to make a soft dough (may not use entire 1/8 cup of milk)
  5. Turn dough out onto a floured surface, and roll or pat out to 1/2 inch thickness. Cut into circles using a biscuit cutter and place biscuits 1” apart onto a greased baking sheet.
  6. Bake for 12-15 minutes or until golden brown.
  7. Cool for 20 minutes, then slice biscuits in half and butter the middle. Layer the ham between the halves.
