Sweet Potato Biscuit Recipe for Spring Brunches

Is there anything sweeter than a leisurely weekend morning brunch?
Spring is filled with so many wonderful brunch style celebrations from Easter to Mother’s Day and graduation parties. Surprise your family and friends with these incredibly delicious Sweet Potato Country Ham Biscuits. With handmade dough and the slightly salty ham, it’s a combination that’s sure to delight.
Sweet Potato Country Ham Biscuits
Ingredients
1 cup all-purpose flour
3 tsp. baking powder
2 tsp. white sugar
1 tsp. salt
2 tbsp. butter, cubed
3/4 cup mashed sweet potatoes
5-6 tsp. brown sugar
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1/8 cup milk
1/2 – 1 pound thinly-sliced country (salty) ham
Directions
- Preheat oven to 400 degrees.
- Boil sweet potatoes until tender and mash. Add in brown sugar, cinnamon, nutmeg, and ginger to mashed potatoes.
- Stir together flour, baking powder, white sugar, and salt. Use your hands to cut in the butter until pieces of dough form and become slightly grainy.
- Mix in the sweet potatoes and enough of the milk to make a soft dough (may not use entire 1/8 cup of milk)
- Turn dough out onto a floured surface, and roll or pat out to 1/2 inch thickness. Cut into circles using a biscuit cutter and place biscuits 1” apart onto a greased baking sheet.
- Bake for 12-15 minutes or until golden brown.
- Cool for 20 minutes, then slice biscuits in half and butter the middle. Layer the ham between the halves.
